Is this the same as muting in a player?

The preview switch only mutes playback. Remove audio exports a separate file with no audio tracks, so turning the player volume up cannot restore the removed sound.

Can I keep the voice and remove only the music?

No. This tool removes every audio track. Separating voice and music requires a different tool.
